Summer's produce come together into this delicious dish!
Instructions
- Saute vegetables in olive oil over medium high heat until tender.
- While veggies are cooking start the couscous or orzo.  Prepare  according to package directions.
- Add diced tomatoes, and  balsamic vinegar to the cooked veggies.
- Simmer for a few  minutes.
- Place cooked pasta in medium bowl or serving  platter, and serve the veggies on top.
