Ingredients

Instructions

  1. Saute vegetables in olive oil over medium high heat until tender.
  2. While veggies are cooking start the couscous or orzo. Prepare according to package directions.
  3. Add diced tomatoes, and balsamic vinegar to the cooked veggies.
  4. Simmer for a few minutes.
  5. Place cooked pasta in medium bowl or serving platter, and serve the veggies on top.
