Potato salad without mayo, but full of flavor!
- Boil red potatoes in salted water for about 25 mins, or until tender.
- Drain and chill completely.
- Quarter potatoes and place into a salad bowl. Add green onions to the salad.
- In a separate small bowl, whisk together mustard, olive oil, balsamic, garlic, onion salt and pepper.
- Pour over the potatoes and toss to coat.
Garnish with fresh parsley or dill.
