Ingredients
- 4 cups fresh pineapple, finely chopped
- 1 red onion, finely chopped
- 4 green onion, chopped
- 1 jalapeno pepper, seeded & finely chopped
- 2 red mini sweet peppers, finely chopped
- 2 orange mini sweet peppers, finely chopped
- 1/4 cup cilantro, chopped
- zest and juice of one lime
- 2 Tbsp Blood Orange or Jalapeño Olive Oil
- 2 Tbsp Pineapple Balsamic
- 1/4 tsp salt
Instructions
- Combine pineapple, red onion, peppers, and cilantro in a bowl.
- In a separate bowl, whisk together lime zest, lime juice, olive oil, balsamic, and salt.
- Pour over the salsa, and stir together.
- Serve with tortilla chips or over fish.
