Fun, Fruity Flavors!

Ingredients

  • 3/4 cup couscous
  • 3/4 cup water
  • 1/2 tsp salt, divided
  • 2 cups fresh blueberries
  • 1 fresh mango, cubed
  • 1/2 cup red onion, chopped
  • 2 Tbsp fresh mint, chopped
  • 1/2 cup roasted & salted, sunflower seeds
  • 1 Tbsp lemon juice
  • 2 Tbsp Chipotle Olive Oil
  • 3 Tbsp Mango Balsamic
  • 1/4 tsp pepper

Instructions

  1. Combine water and 1/4 tsp salt in a small saucepan. Bring to a boil.
  2. Stir in couscous, cover, remove from heat and let stand for 5 mins.
  3. Fluff the couscous with a fork, then move to a medium bowl, let cool.
  4. Mix in the blueberries, mango, onion, mint, sunflower seeds, lemon juice, chipotle olive oil, mango balsamic, 1/4 tsp salt and pepper.
