Ingredients
- 3/4 cup couscous
- 3/4 cup water
- 1/2 tsp salt, divided
- 2 cups fresh blueberries
- 1 fresh mango, cubed
- 1/2 cup red onion, chopped
- 2 Tbsp fresh mint, chopped
- 1/2 cup roasted & salted, sunflower seeds
- 1 Tbsp lemon juice
- 2 Tbsp Chipotle Olive Oil
- 3 Tbsp Mango Balsamic
- 1/4 tsp pepper
Instructions
- Combine water and 1/4 tsp salt in a small saucepan. Bring to a boil.
- Stir in couscous, cover, remove from heat and let stand for 5 mins.
- Fluff the couscous with a fork, then move to a medium bowl, let cool.
- Mix in the blueberries, mango, onion, mint, sunflower seeds, lemon juice, chipotle olive oil, mango balsamic, 1/4 tsp salt and pepper.
