Delightful flavor combinations.

Ingredients

  • 2 bulbs fennel
  • fennel fronds and threads, finely chop
  • 1 medium red onion
  • 3 celery stalks
  • 1 green apple
  • 3 scallions, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 3 Tbsp Herbes de Provence Olive Oil
  • 2 Tbsp Bianco (White) Balsamic
  • 1 lemon, juiced
  • salt & pepper, to taste

Instructions

  1. Thinly slice on a mandolin or with a knife, the fennel, red onion, celery, and green apple.
  2. Combine fennel, onion, celery, green apple, scallions and parsley in a bowl.
  3. In a small bowl, combine olive oil, balsamic, lemon juice, salt & pepper, pour over slaw and mix well.
