Ingredients
- 2 bulbs fennel
- fennel fronds and threads, finely chop
- 1 medium red onion
- 3 celery stalks
- 1 green apple
- 3 scallions, thinly sliced
- 1/4 cup fresh parsley, chopped
- 3 Tbsp Herbes de Provence Olive Oil
- 2 Tbsp Bianco (White) Balsamic
- 1 lemon, juiced
- salt & pepper, to taste
Instructions
- Thinly slice on a mandolin or with a knife, the fennel, red onion, celery, and green apple.
- Combine fennel, onion, celery, green apple, scallions and parsley in a bowl.
- In a small bowl, combine olive oil, balsamic, lemon juice, salt & pepper, pour over slaw and mix well.
