Ingredients
- 1 cup uncooked bulgar
- 1 cup boiling water
- 2 cups fresh blueberries
- 1/2 cup chopped green onions
- 1/2 cup dried cranberries
- 3/4 cup sliced almonds
- 1/4 cup fresh mint, chopped
- 4 Tbsp Lemon Olive Oil or a Fruity EVOO
- 4 Tbsp Blueberry Balsamic
- 1 tsp ground ginger
- 1/2 tsp each salt & pepper
- 1 tsp sugar
Instructions
- Combine bulgar and the boiling water in a large bowl. Cover and let stand 30 mins.
- Stir in blueberries, green onions, cranberries, almonds and mint.
- In a small bowl, whisk together the olive oil, balsamic, ginger, salt and pepper, and sugar.
- Mix into the bulgar salad.
- Cover salad and chill thoroughly. Before serving let it sit out for 15 mins.
