Instructions
- Blanch the asparagus in lightly salted boiling water for approx. 3 mins. or until crisp-tender.
- Remove from heat and refresh under cold water; drain well.
- Toss asparagus with just enough olive oil to lightly coat.
- Sprinkle course salt & pepper on top.
- Drizzle balsamic over it.
- Use a vegetable peeler to shave curls of parmigiano on top.
