- 2 lbs yukon gold potatoes, peeled
- 2 Granny Smith apples, peeled and diced
- 1/4 cup half & half
- 1 Tbsp butter
- 1 Tbsp Herbes de Provence Olive Oil
- salt & pepper, to taste
- Boil potatoes and apples in salted water for about 20 to 25 mins, or until tender.
- Drain well.
- Add half & half, butter, olive oil, salt and pepper.
- Mash potatoes until smooth.
