Ingredients

  • 2 lbs yukon gold potatoes, peeled
  • 2 Granny Smith apples, peeled and diced
  • 1/4 cup half & half
  • 1 Tbsp butter
  • 1 Tbsp Herbes de Provence Olive Oil
  • salt & pepper, to taste

Instructions

  1. Boil potatoes and apples in salted water for about 20 to 25 mins, or until tender.
  2. Drain well.
  3. Add half & half, butter, olive oil, salt and pepper.
  4. Mash potatoes until smooth.
