Instructions
- Slice cucumbers in half lengthwise, then scoop out the seeds. Slice the cucumbers into 1/4" thick half moons and place in a colander.
- Sprinkle the cucumbers with kosher salt and let rest for 30 minutes.
- After 30 minutes, rinse cucumbers and pour them onto a clean towel. Squeeze the excess moisture from the cucumbers and pout them into a serving bowl.
- Thinly slice the green onions on the bias and add to cucumbers.
- Toss vegetables with Oil and Balsamic. Adjust seasoning with extra salt and pepper if desired.
