  1. Blanch the asparagus in lightly salted boiling water for approx. 3 mins.
  2. Remove from heat and refresh under cold water; drain well.
  3. Place spinach leaves on 4 plates and lay asparagus on top.
  4. In pan over medium heat, cook red onion, garlic, and pepper in olive oil for 3 mins, then add balsamic cook until warm.
  5. Pour warm dressing over salad.
