Beets and fig balsamic, a perfect partner!



  1. Preheat oven to 350.
  2. Line a baking sheet with foil.
  3. Wash the beets, trim the ends, and place on the baking sheet.
  4. Drizzle 1 Tbsp olive oil over beets. Salt & pepper.
  5. Roast for 45-60 mins, or until they pierce easily with a knife. Remove from the oven and let cool.
  6. Peel the beets & cut into wedges.
  7. On a platter, spread out the mixed greens, place the beets and pecans on top.
  8. Drizzle with 1 Tbsp olive oil, & balsamic.
  9. Sprinkle with blue cheese.
  10. Salt & pepper to taste.
