Ingredients
- 2 Tablespoons Butter Olive Oil (or Ginger Olive Oil)
- 5 cloves garlic, minced
- 1 Tablespoon grated ginger
- 3 1/2 Cups mixed vegetables (peas, edamame, carrots, bean sprouts, corn, mushrooms)
- 1 Cup chopped kimchi
- 3 Cups rice or riced cauliflower
- 2 Tablespoons Black Garlic Balsamic
- 3 Tablespoons soy sauce
- 4 eggs, beaten
- 6 green onions, sliced thin
- Possible garnishes: sesame seeds, sesame oil, sriracha
Instructions
- Heat the oil in a large skillet over medium-high heat. Add garlic and ginger; saute until fragrant.
- Add vegetables, kimchi, rice, and balsamic.
- Stir-fry until warm throughout and rice begins to crisp.
- Add soy sauce and stir well.
- Push rice to the side and add the eggs. Scramble to cook, then mix into the rice.
- Top with green onions and serve.
- Consider topping with sesame seeds, sesame oil, or sriracha.
