Ingredients

  • 1 cup uncooked orzo pasta
    1/2 cup red pepper, chopped
    1/2 cup grape tomatoes, halved
    1/2 cup pitted Greek olives, halved
    1/4 cup fresh basil, chopped
    1/4 cup red onion, diced
    3 Tbsp Tuscan Herb or Mediterranean Blend Olive Oil
    2 Tbsp 18 yr Balsamic
    1/4 tsp of each, salt & pepper
    2 oz crumbled feta cheese

Instructions

  1. Cook pasta in lightly salted, boiling water for about 8-11 mins, or until al dente; drain well.
  2. Place in large serving bowl. Add the red pepper, tomatoes, olives, basil and red onion.
  3. In a small bowl, whisk together olive oil, balsamic, salt and pepper.
  4. Pour over salad.
  5. Stir in feta cheese.
