  1. Prepare muffin tray with liners. Preheat the oven to 350.
  2. Whisk together flour, sugar, baking soda, salt, and cinnamon.
  3. Add remaining ingredients and stir until just combined. The batter may contain small dry streaks.
  4. Fill each baking cup 2/3 full.
  5. Bake 25-28 minutes, until muffin tops spring back when touched.
  6. Store on counter for 2 days. If any remain after 2 days, keep in fridge.
