Instructions
- Prepare muffin tray with liners. Preheat the oven to 350.
- Whisk together flour, sugar, baking soda, salt, and cinnamon.
- Add remaining ingredients and stir until just combined. The batter may contain small dry streaks.
- Fill each baking cup 2/3 full.
- Bake 25-28 minutes, until muffin tops spring back when touched.
- Store on counter for 2 days. If any remain after 2 days, keep in fridge.
