Instructions
- Preheat oven to 350.
- Prepare 9" round cake pan with oil and parchment paper.
- Whisk together flour, sugar, baking soda and salt.
- Stir in vinegar, water, and oil.
- Pour batter into prepared pan and bake for 30-35 minutes, until a tester comes out clean. Let the cake cool completely.
- Cook cranberries and water in a small pan on low heat for about 10 minutes. The cranberries will soften and release their juices.
- Strain the cranberries through fine mesh, pushing as much through as possible.
- Combine the juice, vinegar, powdered sugar and salt. Stir until smooth.
- Pour glaze over cake.
