Instructions

  1. Preheat oven to 350.
  2. Prepare 9" round cake pan with oil and parchment paper.
  3. Whisk together flour, sugar, baking soda and salt.
  4. Stir in vinegar, water, and oil.
  5. Pour batter into prepared pan and bake for 30-35 minutes, until a tester comes out clean. Let the cake cool completely.
  6. Cook cranberries and water in a small pan on low heat for about 10 minutes. The cranberries will soften and release their juices.
  7. Strain the cranberries through fine mesh, pushing as much through as possible.
  8. Combine the juice, vinegar, powdered sugar and salt. Stir until smooth.
  9. Pour glaze over cake.
