Fresh and Healthy!

Ingredients

  • 1 cup uncooked bulgar
  • 1 cup boiling water
  • 2 cups fresh blueberries
  • 1/2 cup chopped green onions
  • 1/2 cup dried cranberries
  • 3/4 cup sliced almonds
  • 1/4 cup fresh mint, chopped
  • 4 Tbsp Lemon Olive Oil or a Fruity EVOO
  • 4 Tbsp Blueberry Balsamic
  • 1 tsp ground ginger
  • 1/2 tsp each salt & pepper
  • 1 tsp sugar

Instructions

  1. Combine bulgar and the boiling water in a large bowl. Cover and let stand 30 mins.
  2. Stir in blueberries, green onions, cranberries, almonds and mint.
  3. In a small bowl, whisk together the olive oil, balsamic, ginger, salt and pepper, and sugar.
  4. Mix into the bulgar salad.
  5. Cover salad and chill thoroughly. Before serving let it sit out for 15 mins.
