Spinach Cobb Salad with hot bacon dressing

Ingredients

  • 1 chicken breast
  • salt and pepper
  • 2 Tbsp Bacon Olive Oil
  • 3 Tbsp Bourbon Maple Balsamic
  • 5 oz spinach
  • 1/4 red onion, sliced thin
  • 1/3 C kalamata olives, halved
  • 1/2 C ham cubes
  • 1/2 C cherry tomatoes, halved
  • 3 strips bacon
  • 1 Tbsp dijon mustard
  • 1 avocado, pitted and cubed
  • 1/2 cucumber, chopped
  • 2 hard boiled eggs, sliced
  • 1/3 C blue cheese crumbles

Instructions

  1. Slice the chicken breast into 2 thin pieces, then season every side with salt and pepper. Place chicken in a resealable bag with 1 Tablespoon each oil and vinegar. Marinate for 20 minutes, then grill. Let cool, then thinly slice.
  2. Toss spinach with chicken, onion, olives, ham, and tomatoes.
  3. Cook bacon in a saucepan, then set the bacon aside to cool. To the bacon grease, add 1 Tbsp oil, 2 Tbsp vinegar, and mustard. Whisk over low heat until combined and warm. Pour dressing over salad.
  4. Top salad with crumbled bacon, avocado, cucumber, eggs, and blue cheese.
  5. Dress with salt and pepper, then serve.
