The bright, fresh flavors in this salad make it perfect to serve alongside grilled proteins and flavorful middle eastern spices.

Ingredients

  • 10 oz cherry tomatoes
  • 1/2 english cucumber
  • 1 small red onion or shallot
  • 1 C herbs (mint, parsley, chives, cilantro, etc)
  • 2 Tbsp Key Lime Balsamic
  • 2 Tbsp Fernleaf Dill Olive Oil
  • 1/2 tsp sumac (optional but tasty!)
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Dice cherry tomatoes to small bite size pieces, then let the pieces rest in a colander to drain excess seeds and liquid.
  2. Dice cucumber and red onion to match the size of the tomatoes.
  3. Roughly chop or tear the herbs.
  4. Combine cucumber, onion, tomato, and herbs in a bowl.
  5. In a small container with a lid, combine vinegar, olive oil, sumac, salt and pepper. Shake to combine, then pour dressing over the salad.
  6. Stir everything together and serve.
