The bright, fresh flavors in this salad make it perfect to serve alongside grilled proteins and flavorful middle eastern spices.
Ingredients
- 10 oz cherry tomatoes
- 1/2 english cucumber
- 1 small red onion or shallot
- 1 C herbs (mint, parsley, chives, cilantro, etc)
- 2 Tbsp Key Lime Balsamic
- 2 Tbsp Fernleaf Dill Olive Oil
- 1/2 tsp sumac (optional but tasty!)
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Dice cherry tomatoes to small bite size pieces, then let the pieces rest in a colander to drain excess seeds and liquid.
- Dice cucumber and red onion to match the size of the tomatoes.
- Roughly chop or tear the herbs.
- Combine cucumber, onion, tomato, and herbs in a bowl.
- In a small container with a lid, combine vinegar, olive oil, sumac, salt and pepper. Shake to combine, then pour dressing over the salad.
- Stir everything together and serve.
