Potato salad without mayo, but full of flavor!

Ingredients

Instructions

  1. Boil red potatoes in salted water for about 25 mins, or until tender.
  2. Drain and chill completely.
  3. Quarter potatoes and place into a salad bowl. Add green onions to the salad.
  4. In a separate small bowl, whisk together mustard, olive oil, balsamic, garlic, onion salt and pepper.
  5. Pour over the potatoes and toss to coat.

Tips

Garnish with fresh parsley or dill.
