This colorful salad celebrates the best in winter produce! Using a variety of oranges adds color and interest.
Ingredients
- 1 small head red leaf lettuce
- 5 oranges, assorted types
- 1/2 Cup pomegranate arils
- 1 green onion, green parts sliced very thin
- 1/4 Cup fresh mint, chopped
- salt and pepper to taste
- 1 tsp Lemon or Persian Lime Olive Oil
- 1 tsp Pomegranate Balsamic
- 1/3 Cup pistachios or walnuts, chopped
- 1/4 Cup feta crumbles
Instructions
- Wash lettuce and chop into bite size pieces. Lay on a chilled plate or platter.
- Cut the peels off the oranges: first slice off each end, then work your knife around the orange in a circular pattern to retain the round shape. Slice oranges into 1/3" slices and arrange over the lettice.
- Sprinkle pomegranate seeds, green onion and mint over the oranges. Use your fingers to tuck different colors around the plate.
- Sprinkle with salt and freshly ground pepper.
- Drizzle with Olive Oil and Vinegar.
- Top with nuts and feta.
