Instructions
- Bend back corn husks and remove corn silk. Soak corn in cold water for 20 minutes.
- Make Magic Sauce: combine mayonnaise, 1 Tablespoon Olive Oil, Balsamic, and garlic salt.
- Prep grill.
- After 20 minute soak, drain the corn and sprinkle each cob with salt. Drizzle 1 teaspoon Olive Oil over each cob, then re-wrap husks to protect corn from direct heat.
- Grill corn for 20 minutes. For additional flavor, pull the husks back and grill the corn on direct heat.
- Remove husks and spread Magic Sauce on each cob. Garnish with queso fresco and cilantro. Top with chili powder, paprika, or hot sauce for additional heat.
