Bring these brunch-inspired nibbles to a barbecue and watch them disappear!

Ingredients

  • 1/4 C Sicilian Lemon Balsamic
  • 1/2 red onion, sliced very thin
  • 6 hard boiled eggs, peeled
  • 2 Tbsp mayonnaise
  • 1 Tbsp Dill Olive Oil
  • 2 tsp yellow mustard
  • 1 1/2 tsp prepared horseradish
  • everything bagel seasoning
  • 2 oz cold smoked salmon
  • capers

Instructions

  1. Combine balsamic and 1/4 C water in a jar, and microwave for 30 seconds. Stir in red onion, and let cool.
  2. Slice eggs in half. Place yolks in a bowl, and set whites on a plate.
  3. To the yolks, add mayonnaise, olive oil, mustard, and horseradish. Mash with a fork until creamy.
  4. Add a dollop of filling to each egg white, then top with everything bagel seasoning. Top with a flourish of salmon, then several capers and red onion.

Tips

These are best assembled shortly before serving, but the onions, eggs, and filling could be prepared in advance.
