This dessert maximizes flavor with just a few ingredients, and minimizes dishes by mixing right in the baking dish.
Instructions
- Heat oven to 350.
- Combine chopped berries and 2 Tablespoons balsamic in small pot. Let sit 20 minutes.
- In 8-inch square pan, combine flour, sugar, cocoa powder, baking soda and salt. Stir to combine, then make 2 wells in the dry mix. Pour 2 Tablespoons balsamic into one well, olive oil into the other. Pour 1 cup water over the top, then stir with a spoon until well mixed. Bake 25 minutes, then let cool.
- Cook berries over medium-low heat so they release juices and soften. Mush the berries as you stir, reducing to a thick consistency with some berry chunks. Let cool.
- Cut the cake into squares. Serve with a spoonful of berry compote and a dollop of whipped cream.
