Celebrate fresh cheese and juicy summer fruit.

Ingredients

  • 5 oz arugula or mixed greens
  • 1/2 red onion or shallot, sliced thin
  • 2 Tbsp Basil Olive Oil
  • 2 Tbsp White Peach Balsamic
  • salt and pepper
  • 1/2 pound strawberries
  • 3 oz blackberries
  • 10 cherry tomatoes
  • 1 peach
  • 3 oz blueberries
  • 1 ball of burrata (about 4 oz)
  • fresh cracked pepper

Instructions

  1. Combine greens and red onion in a bowl.
  2. In a small bowl, whisk together olive oil, balsamic, salt and pepper.
  3. Pour dressing over greens and toss to combine. Arrange on a platter.
  4. Clean and slice strawberries, blackberries, and cherry tomatoes. Arrange fruit over greens.
  5. Cut the peach into wedges, and cut each wedge in half. Arrange peach and blueberries atop the salad.
  6. Rip the burrata into small pieces and arrange over the fruit.
  7. Top with freshly ground black pepper.
  8. Enjoy immediately or refrigerate 2 hours before serving.
