Celebrate fresh cheese and juicy summer fruit.
Ingredients
- 5 oz arugula or mixed greens
- 1/2 red onion or shallot, sliced thin
- 2 Tbsp Basil Olive Oil
- 2 Tbsp White Peach Balsamic
- salt and pepper
- 1/2 pound strawberries
- 3 oz blackberries
- 10 cherry tomatoes
- 1 peach
- 3 oz blueberries
- 1 ball of burrata (about 4 oz)
- fresh cracked pepper
Instructions
- Combine greens and red onion in a bowl.
- In a small bowl, whisk together olive oil, balsamic, salt and pepper.
- Pour dressing over greens and toss to combine. Arrange on a platter.
- Clean and slice strawberries, blackberries, and cherry tomatoes. Arrange fruit over greens.
- Cut the peach into wedges, and cut each wedge in half. Arrange peach and blueberries atop the salad.
- Rip the burrata into small pieces and arrange over the fruit.
- Top with freshly ground black pepper.
- Enjoy immediately or refrigerate 2 hours before serving.
