- 2 cans baby butter beans, drained
- 1 can medium artichokes, drained & quartered
- 1 cucumber, seeded & chopped
- 1 can black olives, drained & halved
- 1/2 cup red onion, diced
- 1 pint grape tomatoes, halved
- 4 Tbsp Dill Olive Oil
- 3 Tbsp Sicilian Lemon Balsamic
- 1 tsp minced garlic
- 1 tsp sugar
- 1/4 tsp each, salt & pepper
- Combine in a bowl, butter beans, artichokes, cucumber, black olives, red onion, and tomatoes.
- In a small bowl, whisk together olive oil, balsamic, garlic, sugar, salt & pepper.
- Pour over salad, and mix to combine.
